If you’re looking for a tasty dessert that is very easy to make, why not give rhubarb compote and yogurt a try? Just cook the rhubarb with a little sugar in a saucepan for 15 minutes and then alternate layers of rhubarb and yogurt in your glass. You could also crumble some biscuits over the top for a little extra crunch.

Muffins always go down really well. These individual little cakes are perfect for dessert, afternoon tea, breakfast or even brunch. Just use a recipe for plain muffins or a yogurt cake and add some rhubarb that you have previously cut up and soaked in sugar and water. Beautiful!

Rhubarb can be cooked, but it can also be enjoyed as a drink by using it to flavour your iced tea. Just cut up three bits of rhubarb, cook it for 15 minutes in a saucepan with a little sugar and at the end, add water. Leave it to chill in the fridge for an hour, filter and then you’re good to go!
